Hot Flash Cook Chicken Schnitzel

- 4 boneless, skinless chicken breasts (about 6 oz each)
- ¾ cup whole-wheat flour
- 2 large eggs
- 1 cup panko breadcrumbs
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon garlic powder

method
- Place chicken breasts between plastic wrap and pound to ¼-inch thickness using a meat mallet.
- Set up three shallow bowls: one with whole-wheat flour mixed with salt and pepper, one with beaten eggs, one with panko breadcrumbs mixed with garlic powder.
- Coat each chicken breast in flour, shaking off excess. Dip in egg, then coat thoroughly with panko.
