Hot Flash Cook Asparagus Soup

serves 4

ingredients

  • 2 tbsp extra-virgin olive oil
    heart health
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1.5 lbs fresh asparagus, trimmed and cut into 1-inch pieces

  • 4 cups homemade Vegetable Bone Broth

  • 1/3 cup Greek yogurt (plain, full-fat)

  • Salt and white pepper to taste
  • 2 tbsp fresh lemon juice
  • Nutmeg, pinch

method

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion and cook until softened, about 5 minutes.
  3. Stir in garlic and cook 1 minute more.
  4. Add asparagus pieces and bone broth; bring to a simmer.
  5. Cook until asparagus is very tender, about 12–15 minutes.
  6. Blend soup until smooth using an immersion blender or in batches in a regular blender.
  7. Remove from heat and stir in Greek yogurt until fully incorporated.
  8. Season with salt, white pepper, lemon juice, and nutmeg.
  9. Serve hot (do not boil after adding yogurt).
