  • 3/4 cup roasted beets, cubed
    blood sugar & pre-diabetesheart health
  • 2 tablespoons crumbled feta cheese or goat cheese
  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon balsamic vinegar
  • Sea salt and black pepper to taste

method

  1. Heat 1 tablespoon olive oil in a large pot over medium heat. Sauté onion and garlic until softened, about 3 minutes.
  2. Add hulled barley and toast for 2 minutes, stirring frequently.
  3. Pour in Chicken Bone Broth and bring to a boil. Reduce heat and simmer, partially covered, for 45–50 minutes until barley is tender and liquid is mostly absorbed.
  4. Meanwhile, heat 1 tablespoon olive oil in a skillet over medium-high heat. Sauté mushrooms until golden, about 6 minutes. Add kale and cook until wilted and tender, 3–4 minutes. Stir in beets and warm through.
  5. Fluff barley with a fork and transfer to bowls. Top with mushroom-kale-beet mixture, feta, and a drizzle of balsamic vinegar. Season with sea salt and pepper.
