Hot Flash Cook Beef Barley Stew

ingredients
- 2 lb beef chuck, cut into 1-inch cubesmuscle loss
- 2 tablespoons extra-virgin olive oilheart health
- 1 large onion, diced
- 4 cloves garlic, mincedheart health
- 4 carrots, cut into chunks
- 3 celery stalks, cut into chunks
- 10 oz mushrooms, halvedbone density (I'm shrinking!)

- 6 cups Beef Bone Brothbone density (I'm shrinking!)achy joints
- 2 bay leaves
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
method
- Heat olive oil in a large pot over medium-high heat. Season beef with salt and pepper; brown in batches, 3–4 minutes per side. Set aside.
- Add onion and garlic to the pot; sauté 2 minutes until fragrant.
- Return beef to pot. Add carrots, celery, mushrooms, hulled barley, bone broth, bay leaves, thyme, and rosemary.
- Bring to a boil, then reduce heat and simmer, covered, for 1.5–2 hours until beef is tender and barley is cooked.
- Remove bay leaves. Taste and adjust seasoning. Serve hot.
