method

  1. Macerate blood orange slices with 1½ tbsp date sugar, pinch salt for 30 minutes minimum — Cointreau omitted.
  2. In a blender, combine ricotta, 3 eggs, 1 egg yolk, ⅜ cup date sugar, and whole milk; blend until smooth.
  3. Add olive oil, vanilla, and orange blossom water; blend briefly.
  4. In a separate bowl, whisk together almond flour, semolina, cardamom, salt, baking powder, and ground flax.
  5. Fold the wet blender mixture into the dry until just combined.
  6. Arrange macerated orange slices across the bottom of an oiled or buttered 9 inch round pan.
  7. Pour batter over the oranges.
  8. Bake at 350°F for 35–40 minutes until just set and golden at edges.
  9. Cool in pan 15 minutes, then invert onto a plate so blood oranges are on top.

the swaps that make it work

1½ tbsp white sugar (maceration) + ½ cup white sugar (batter)
1½ tbsp date sugar + ⅜ cup date sugar
Whole-food sweetener with fiber and potassium intact; lower glycemic impact, deeper caramel notes, blood sugar stability.
1 tbsp Cointreau (optional, total)
Omitted entirely
Eliminates alcohol; keeps the cake clean and bright without compromising the blood orange center.
No ground flax
1 tbsp ground flax folded into wet ingredients
Invisible in dark batter; adds lignans (phytoestrogens reducing hot flash frequency), omega-3 ALA, and fiber.
No cardamom
¼ tsp cardamom in batter
Aromatic spice amplifies the citrus brightness and adds antioxidants; pairs beautifully with blood orange.
No botanical element
Orange blossom water kept as original; cardamom + blood orange maceration
Botanical elements deepen flavor and support digestion; blood orange and cardamom are a natural pairing.
