Hot Flash Cook Broken Rice Porridge

ingredients

  • 1 cup broken rice (or 3/4 cup broken rice + 1/4 cup pearl barley for extra fiber)
  • 8 cups Chicken Bone Broth
    bone density (I'm shrinking!)tired & low energy
  • 2 tbsp coconut aminos or tamari (or low-sodium fish sauce)

  • 3 cloves garlic, minced
  • 4 oz ground chicken or lean pork
  • 2 green onions, chopped
  • 1 tsp white pepper
  • Salt to taste
  • Fresh cilantro and ginger slices for garnish (optional)

method

  1. Heat olive oil in a large pot over medium heat. Sauté garlic until fragrant, about 1 minute.
  2. Add ground meat and cook until no longer pink, breaking apart as it cooks, about 3–4 minutes.
  3. Add broken rice (and barley if using) and stir to coat with oil, toasting lightly for 1–2 minutes.
  4. Pour in Chicken Bone Broth and bring to a boil.
  5. Reduce heat to low, cover partially, and simmer for 45–60 minutes, stirring occasionally, until rice breaks down into a creamy porridge. Add water if needed.
  6. Stir in coconut aminos and white pepper. Taste and adjust salt.
  7. Serve hot in bowls, garnished with green onions, fresh cilantro, and thin slices of ginger.
