Hot Flash Cook Cauliflower Masala Soup

ingredients

  • 2 tablespoons extra-virgin olive oil
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 2 teaspoons ground cumin
  • 1 teaspoon ground coriander
  • ½ teaspoon ground turmeric
  • ¼ teaspoon cayenne pepper
  • 1 head cauliflower, cut into florets
  • 4 cups vegetable or bone broth

  • ¾ cup plain Greek yogurt

  • 1 can (14 oz) diced tomatoes
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • Fresh cilantro for garnish

method

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and cook until softened, about 5 minutes.
  3. Stir in garlic and ginger, cook 1 minute.
  4. Add cumin, coriander, turmeric, and cayenne; toast for 30 seconds.
  5. Add cauliflower and broth; bring to a boil.
  6. Reduce heat and simmer 15 minutes until cauliflower is tender.
  7. Remove from heat and let cool slightly.
  8. Blend soup until smooth (or leave chunky if preferred).
  9. Stir in Greek yogurt and tomatoes; gently warm through (do not boil).
  10. Season with salt and pepper.
  11. Serve hot, garnished with cilantro.
