Hot Flash Cook Chawanmushi

serves 4

ingredients

  • 3 large eggs
    muscle loss
  • 1 cup Chicken Bone Broth
    bone density (I'm shrinking!)
  • 1.5 tablespoons coconut aminos (or low-sodium tamari)

  • 1 tablespoon mirin
    blood sugar & pre-diabetes
  • 1 teaspoon sea salt

  • 4 oz skinless chicken breast, diced small
    muscle loss
  • 4 shiitake mushrooms, sliced

  • 2 oz kamaboko (fish cake), sliced
  • 4 ginkgo nuts (or chestnuts)

  • 2 stalks green onion, chopped
  • pinch of shichimi togarashi (optional)

method

  1. Prepare Chicken Bone Broth if not already made.
  2. Heat broth gently. Stir in coconut aminos, mirin, and sea salt. Let cool slightly.
  3. Beat eggs gently until combined but not frothy.
  4. Slowly pour cooled broth into eggs while stirring gently.
  5. Strain mixture through a fine sieve into another bowl.
  6. Distribute chicken, mushrooms, kamaboko, and ginkgo nuts evenly among four tea cups.
  7. Pour egg mixture carefully into each cup until three-quarters full.
  8. Place cups in a steamer or hot water bath. Steam gently over medium heat for 12–15 minutes until custard is set but still slightly jiggly in the center.
  9. Garnish with green onion and shichimi togarashi if desired. Serve warm.
