Hot Flash Cook Chicken Posole

ingredients
- 2 lbs chicken thighs or breasts, skin removedmuscle losstired & low energy
- 1 tbsp extra virgin olive oilheart health
- 1 large onion, halved
- 8 garlic cloves, minced
- 2 tbsp dried oregano
- 1 tbsp cumin
- 8 cups homemade Chicken Bone Brothbone density (I'm shrinking!)achy joints
- 2 (29 oz) cans white hominy, drained and rinsed
- 2 dried guajillo chiles, seeded
- 2 dried ancho chiles, seeded
- 1 tsp salt
- ½ tsp black pepper
- Toppings: shredded green cabbage, radishes, lime wedges, baked tortilla chips, plain Greek yogurt
method
- Heat olive oil in a large pot. Add chicken and brown on both sides, 5 minutes per side. Remove and set aside.
- Add onion and garlic, cook 2 minutes until fragrant.
- Add oregano and cumin, toast 1 minute.
- Pour in bone broth, scraping up browned bits. Return chicken to pot.
- Simmer 20 minutes until chicken is cooked through. Remove chicken, shred, and set aside.
- Toast dried chiles in a dry skillet 30 seconds per side. Soak in hot water 10 minutes, then blend with ½ cup soaking liquid until smooth.
- Strain chile puree into the pot. Add hominy, shredded chicken, salt, and pepper.
- Simmer 15 minutes. Taste and adjust seasoning.
- Serve in bowls with cabbage, radishes, lime wedges, baked tortilla chips, and Greek yogurt on the side.
