- 1 lb fresh dark cherries, pittedhot flashes & night sweats
- 3 large eggs
- 3/4 cup unsweetened almond milk
- 1/4 cup whole wheat pastry flour
- 1/4 cup rolled oats, finely ground
- 2 tablespoons honey or pure maple syrupblood sugar & pre-diabetes
- 1 tablespoon extra-virgin olive oilheart health
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/4 teaspoon nutmeg
- 2 tablespoons sliced raw almonds
method
- Preheat oven to 350°F. Oil a 9-inch pie dish or shallow baking dish with a light coating of olive oil.
- Scatter pitted cherries evenly in the prepared dish.
- In a blender, combine eggs, almond milk, whole wheat pastry flour, ground oats, honey, olive oil, vanilla, salt, and nutmeg. Blend until smooth.
- Pour batter over cherries. Sprinkle almonds over the top.
- Bake for 35–40 minutes, until golden and set but still slightly jiggly in the center.
