method
- Preheat oven to 425°F (220°C). Place a 10-inch cast iron skillet inside to heat.
- Whisk together all-purpose flour, whole wheat pastry flour, almond milk, eggs, honey, vanilla, and salt until smooth.
- Carefully remove hot skillet and add olive oil (or clarified ghee), swirling to coat evenly.
- Pour batter into hot oiled skillet.
- Bake for 20–25 minutes until golden, puffed, and edges are crispy.
- Remove from oven. Top with fresh berries and lemon zest. Serve immediately.
