ingredients
- 1 lb spinach, freshbone density (I'm shrinking!)memory & focus
- 3 tbsp sesame seedsbone density (I'm shrinking!)heart health
- 2 tbsp coconut aminosblood sugar & pre-diabetesheart health
- 1 tsp honey or maple syrupblood sugar & pre-diabetes
- 1 tbsp mirin
- 1 tsp sesame oilheart health
- 1 clove garlic, mincedheart health
- Salt to taste
method
- Blanch spinach in boiling salted water for 1–2 minutes until just tender.
- Drain well and squeeze out excess moisture by wrapping in a clean cloth.
- Toast sesame seeds in a dry pan over medium heat for 2–3 minutes, stirring often, until fragrant. Do not burn.
- Grind toasted sesame seeds with a mortar and pestle until mostly crushed with some whole seeds remaining (or use a food processor briefly).
- In a small bowl, whisk together coconut aminos, honey, mirin, sesame oil, and minced garlic.
- Add the ground sesame mixture to the dressing and stir well.
- Toss the blanched spinach with the sesame dressing until evenly coated.
- Serve at room temperature or chilled.
