Hot Flash Cook Green Falafel

- 2 cups fresh parsley, packed
- 1 cup fresh cilantro, packed
- 1 cup fresh dill, packed
- 1 medium onion, chopped
- 4 cloves garlic, minced
- 2 cans (15 oz each) chickpeas, drained
- 1/2 cup whole wheat flourblood sugar & pre-diabetes
- 2 tablespoons ground cumin
- 1 tablespoon ground coriander
- 1 teaspoon cayenne pepper
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons extra virgin olive oil for coatingheart health
method
- Pulse herbs, onion, and garlic in food processor until finely chopped.
- Add chickpeas, whole wheat flour, cumin, coriander, cayenne, salt, and pepper. Pulse until mixture is coarse and holds together.
- Refrigerate mixture for at least 1 hour.
- Preheat oven to 375°F. Line a baking sheet with parchment paper.
- Form mixture into 16 balls and flatten slightly. Lightly coat with extra virgin olive oil using a pastry brush or spray.
- Arrange on prepared baking sheet and bake for 20–25 minutes, turning halfway through, until golden and crispy.
