Hot Flash Cook Green Falafel

ingredients

  • 2 cups fresh parsley, packed
  • 1 cup fresh cilantro, packed
  • 1 cup fresh dill, packed
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 2 cans (15 oz each) chickpeas, drained
  • 1/2 cup whole wheat flour

  • 2 tablespoons ground cumin
  • 1 tablespoon ground coriander
  • 1 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons extra virgin olive oil for coating

method

  1. Pulse herbs, onion, and garlic in food processor until finely chopped.
  2. Add chickpeas, whole wheat flour, cumin, coriander, cayenne, salt, and pepper. Pulse until mixture is coarse and holds together.
  3. Refrigerate mixture for at least 1 hour.
  4. Preheat oven to 375°F. Line a baking sheet with parchment paper.
  5. Form mixture into 16 balls and flatten slightly. Lightly coat with extra virgin olive oil using a pastry brush or spray.
  6. Arrange on prepared baking sheet and bake for 20–25 minutes, turning halfway through, until golden and crispy.
  7. Serve warm.
