Hot Flash Cook Grilled Sourdough Pita

  • 1.5 cups whole wheat flour
    blood sugar & pre-diabetes
  • 1.5 cups all-purpose flour
  • 1.5 tsp salt
  • 0.5 tsp instant yeast
  • 1.5 cups warm water
  • 2 tbsp olive oil

method

  1. Mix whole wheat flour, all-purpose flour, salt, and yeast in a large bowl.
  2. Add water and olive oil; stir until a shaggy dough forms.
  3. Knead for 8–10 minutes until smooth and elastic.
  4. Cover and let rise at room temperature for 2–4 hours until doubled.
  5. Divide dough into 8 equal pieces; shape into balls.
  6. Cover and rest for 20 minutes.
  7. On a floured surface, roll each ball into a 6-inch round about 1/4 inch thick.
  8. Preheat a grill or cast-iron skillet to medium-high heat.
  9. Grill pitas for 2–3 minutes per side until puffed and lightly charred.
  10. Brush lightly with olive oil and serve warm.
