- 1½ cups whole wheat flour + ½ cup all-purpose flourblood sugar & pre-diabetestired & low energy
- ¾ cup boiling water
- ½ lb ground pork (or ¼ lb pork + ¼ lb shrimp, minced)
- 2 cups napa cabbage, finely choppedhot flashes & night sweats
- 2 green onions, minced
- 1 tbsp coconut aminosblood sugar & pre-diabetes
- 1 tsp sesame oil
- 1 tsp grated gingerhot flashes & night sweats
- 2 cloves garlic, minced
- 1 tbsp olive oil (for pan-frying)heart health
- ¼ cup water (for steaming)
- Coconut aminos for dipping
method
- Make dough: mix whole wheat and all-purpose flours with boiling water until shaggy; knead until smooth, rest 20 min.
- Roll dough into a log, cut into 24 pieces; roll each into a 3-inch circle.
- Mix pork (or pork + shrimp), cabbage, green onion, coconut aminos, sesame oil, ginger, and garlic.
- Place 1 tbsp filling in center of each wrapper; fold into half-moon, crimp edges firmly.
- Heat olive oil in a large skillet over medium-high heat; arrange gyoza flat-side down.
- Pan-fry 2–3 min until golden; add water, cover, and steam 5 min until tender.
- Uncover and fry 1 min more to crisp the bottom.
- Serve hot with coconut aminos for dipping.
