Hot Flash Cook Handmade Pasta Ramen

ingredients

  • 1.5 cups all-purpose flour
    tired & low energy
  • 0.5 cup whole wheat flour
    blood sugar & pre-diabetestired & low energy
  • 5 cups chicken bone broth (homemade or low-sodium)

  • 2 tbsp coconut aminos

  • 1 tsp mirin
  • 1 tsp sesame oil
  • 2 cloves garlic, minced
  • 1 inch ginger, minced
  • 3 cups mixed vegetables (carrots, bok choy, shiitake mushrooms, spinach)

  • 2 soft-boiled eggs, halved

  • 5 oz cooked chicken breast

  • 2 green onions, sliced
  • 1 tbsp extra-virgin olive oil

method

  1. Make ramen dough (see sub-recipe). Prepare bone broth (see sub-recipe) or use store-bought low-sodium broth.
  2. Warm broth in large pot. Stir in coconut aminos and mirin.
  3. Sauté garlic and ginger in olive oil until fragrant, 1 minute. Add to broth with vegetables. Simmer 5–6 minutes until tender-crisp.
  4. In separate pot, bring salted water to boil. Cook noodles 3–4 minutes. Drain.
  5. Divide noodles among bowls. Ladle broth and vegetables over. Top with egg halves, chicken, and green onions.
