Hot Flash Cook Japchae

serves 4

ingredients

  • 8 oz sweet potato starch noodles (dangmyeon)
  • 8 oz beef sirloin, thinly sliced
    muscle losstired & low energy
  • 2 cups fresh spinach

  • 1 cup shiitake mushrooms, sliced

  • 1 medium carrot, julienned
    thinning hair & dry skin
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 2 tbsp coconut aminos

  • 1½ tbsp extra-virgin olive oil

  • 2 tsp honey (or omit)
    blood sugar & pre-diabetes
  • 1 tsp salt
  • ¼ tsp black pepper
  • 2 tsp sesame seeds
  • green onions for garnish

method

  1. Cook sweet potato noodles according to package directions; drain and toss with ½ tbsp olive oil.
  2. Heat ½ tbsp olive oil in a large skillet over medium-high heat. Cook beef until browned (2–3 min); set aside.
  3. In same skillet, stir-fry onion and carrot (2 min), then add mushrooms and garlic (1 min).
  4. Add spinach and cook until wilted (1 min).
  5. Return beef to skillet. Add noodles, coconut aminos, remaining olive oil, honey, salt, and pepper. Toss until heated through (2 min).
  6. Plate and top with sesame seeds and green onions.
