- ½ teaspoon black pepper

- Mix whole wheat flour, all-purpose flour, and salt. Add warm water and 2 tablespoons olive oil; knead into smooth dough. Rest 30 minutes.
- Combine parsley, dill, coriander, green onions, spinach, walnuts, garlic, salt, and pepper in a bowl.
- Divide dough into 8 portions. Roll each thin into a circle.
- Spoon 3 tablespoons filling onto one half of each circle, leaving a border.
- Fold dough over filling to form a half-moon, seal edges by crimping with a fork.
- Heat 3 tablespoons olive oil in a skillet over medium heat. Cook each hat 3–4 minutes per side until golden brown.
- Serve warm.
