Hot Flash Cook Mini Tomato Tarts

ingredients
- 1 lb cherry tomatoes, halvedheart health
- 2 tbsp extra-virgin olive oilheart health
- Salt and pepper to taste
- 1 tsp fresh basil (or 1/2 tsp dried basil)
- 1 sheet whole-wheat puff pastry, thawedblood sugar & pre-diabetes
- 1/2 cup shredded part-skim mozzarellabone density (I'm shrinking!)
- 1/4 cup grated Parmesanbone density (I'm shrinking!)
- 2 tbsp Greek yogurt (instead of mayonnaise)muscle loss
- 1 clove garlic, minced
method
- Preheat oven to 400°F.
- Toss tomatoes with 1 tbsp olive oil, salt, pepper, and fresh basil. Roast on a baking sheet for 12 minutes; set aside.
- Cut puff pastry into 12 squares (3×3 inches). Place on a lined baking sheet and prick with a fork.
- Mix Greek yogurt and garlic. Spread 1/2 tsp on each pastry square.
- Top each square with mozzarella, a roasted tomato half, and a pinch of Parmesan.
- Bake for 12–15 minutes until pastry is golden and cheese melts.
- Cool for 2 minutes before serving.
