Hot Flash Cook Mini Tomato Tarts

ingredients

  • 1 lb cherry tomatoes, halved

  • 2 tbsp extra-virgin olive oil

  • 1 tsp fresh basil (or 1/2 tsp dried basil)
  • 1 sheet whole-wheat puff pastry, thawed

  • 1/2 cup shredded part-skim mozzarella

  • 1/4 cup grated Parmesan

  • 2 tbsp Greek yogurt (instead of mayonnaise)

method

  1. Preheat oven to 400°F.
  2. Toss tomatoes with 1 tbsp olive oil, salt, pepper, and fresh basil. Roast on a baking sheet for 12 minutes; set aside.
  3. Cut puff pastry into 12 squares (3×3 inches). Place on a lined baking sheet and prick with a fork.
  4. Mix Greek yogurt and garlic. Spread 1/2 tsp on each pastry square.
  5. Top each square with mozzarella, a roasted tomato half, and a pinch of Parmesan.
  6. Bake for 12–15 minutes until pastry is golden and cheese melts.
  7. Cool for 2 minutes before serving.
