- 1/4 cup white miso pasteblood sugar & pre-diabetes
- 3 tablespoons sakehot flashes & night sweats
- 1 tablespoon mirin or honey (reduced from 2 tablespoons)blood sugar & pre-diabetes
- 1 teaspoon honey (instead of 1 tablespoon sugar)blood sugar & pre-diabetes
- 4 black cod fillets (6 oz each)
- 2 tablespoons extra-virgin olive oilheart health
- 2 green onions, sliced
- 1 teaspoon sesame seeds
method
- Whisk together miso, sake, mirin, and honey until smooth.
- Pat cod fillets dry and coat generously with miso mixture on all sides. Marinate 4 hours or overnight in the refrigerator.
- Preheat oven to 400°F. Heat olive oil in an oven-safe skillet over medium-high heat.
- Sear cod skin-side up for 2 minutes until golden.
- Transfer skillet to oven and bake 12–15 minutes until cooked through.
- Garnish with green onions and sesame seeds. Serve with brown rice and roasted vegetables.
