Hot Flash Cook Oxtail Pho

serves 4

ingredients

  • 2 lbs oxtail, cut into 2-inch pieces
    muscle lossbone density (I'm shrinking!)
  • 10 cups water
  • 2 tablespoons coconut aminos
    blood sugar & pre-diabetes
  • 1 tablespoon fish sauce
  • ½ teaspoon honey or omit
    blood sugar & pre-diabetes
  • 8 oz brown rice noodles or 100% buckwheat noodles
    blood sugar & pre-diabetestired & low energy
  • Fresh Thai basil, cilantro, lime wedges, jalapeños, bean sprouts for serving

method

  1. Prepare Oxtail Bone Broth (see sub-recipe). Strain broth, reserving oxtail meat. Stir coconut aminos, fish sauce, and honey (if using) into broth.
  2. Cook rice noodles or buckwheat noodles according to package directions; drain.
  3. Divide noodles among bowls. Ladle hot broth and oxtail meat over noodles.
  4. Serve with fresh Thai basil, cilantro, lime wedges, jalapeños, and bean sprouts on the side.
