Hot Flash Cook Saag Paneer

- 14 oz paneer cheese, cubed
- 1.25 lb fresh spinach, roughly choppedbone density (I'm shrinking!)achy joints
- ½ cup low-fat Greek yogurtmuscle lossheart health
- 2 tbsp extra-virgin olive oilheart health
- 1 large onion, diced
- 4 cloves garlic, minced
- 1 tbsp ginger, minced
- 2 green chiles, minced
- 1 tsp cumin seeds
- 1 tsp coriander powder
- ½ tsp garam masala
- ¼ tsp cayenne pepper
- Salt to taste
- ¾ cup low-sodium vegetable broth
method
- Heat olive oil in a large pan. Add cumin seeds and let them crackle.
- Add onion and cook until golden, about 5 minutes.
- Stir in garlic, ginger, and green chiles. Cook for 2 minutes.
- Add coriander powder, garam masala, and cayenne. Toast for 1 minute.
- Add chopped spinach and broth. Simmer for 8–10 minutes until spinach is soft.
- Blend the spinach mixture until smooth using an immersion blender.
- Stir in Greek yogurt and return to a gentle simmer (do not boil).
- Add paneer cubes and cook for 5 minutes until heated through.
- Season with salt and serve hot.
