ingredients
- 12 oz ground pork (93% lean)
- 3 cups fresh spinach, finely choppedbone density (I'm shrinking!)memory & focus

- 1 tbsp toasted sesame oil
- 1 tbsp cornstarch
- 2 cloves garlic, minced
- 1 tsp grated ginger
- 24 shumai wrappers (or whole wheat if available)
- 3 green onions, chopped
- 1 tbsp neutral oil for steaming basket
method
- Mix pork, spinach, coconut aminos, sesame oil, cornstarch, garlic, ginger, and green onions in a bowl until combined.
- Place 1 tbsp filling in center of each wrapper. Gather edges and pinch at top, leaving opening.
- Arrange on parchment-lined steamer basket. Steam over boiling water for 8–10 minutes until cooked through.
- Serve hot with coconut aminos or chili oil for dipping.
