Hot Flash Cook Stuffed Bitter Melon Soup
serves 4
ingredients
- 2 bitter melons (about 1.5 lbs)
- 8 oz ground porkmuscle loss
- 2 dried shiitake mushrooms, rehydrated and choppedbone density (I'm shrinking!)
- 2 tbsp coconut aminosblood sugar & pre-diabetes
- 1 tbsp sesame oil
- 2 cloves garlic, minced
- 1 tsp grated gingerachy joints
- 6 cups Chicken Bone Brothbone density (I'm shrinking!)
- 2 green onions, chopped
- Salt and white pepper to taste
method
- Halve bitter melons lengthwise and scoop out seeds and white pith with a spoon; cut into 2-inch segments.
- Mix ground pork, rehydrated shiitake, coconut aminos, sesame oil, garlic, and ginger in a bowl. (Omit added sugar.)
- Stuff each bitter melon segment generously with the pork mixture.
- Bring Chicken Bone Broth to a boil in a large pot. Carefully add stuffed melon segments.
- Simmer 20–25 minutes until melon is tender and filling is cooked through.
- Season with salt and white pepper. Garnish with green onions and serve hot.
