Hot Flash Cook Stuffed Grape Leaves

ingredients
- 1 jar (16 oz) grape leaves in brine
- 3/4 cup long-grain brown riceblood sugar & pre-diabetestired & low energy
- 12 oz ground lambmuscle lossbone density (I'm shrinking!)
- 1 medium onion, finely diced
- 3 cloves garlic, mincedheart health
- 2 tbsp tomato pasteheart health
- 3 tbsp raw almonds, roughly choppedbone density (I'm shrinking!)heart health
- 2 tbsp fresh mint, chopped
- 1 tbsp fresh dill, chopped
- 1/2 tsp ground cinnamonblood sugar & pre-diabetes
- Salt and pepper to taste
- 3 tbsp extra virgin olive oilheart health
- 1 cup beef broth (low-sodium)heart healthbone density (I'm shrinking!)
- 3 tbsp fresh lemon juiceheart health
- Water as needed
method
- Rinse grape leaves under cold water and lay flat.
- Heat olive oil in a large pot over medium heat. Sauté onion and garlic until soft, about 3 minutes.
- Add ground lamb, breaking it apart, and cook until browned, about 5 minutes. Drain excess fat.
- Stir in tomato paste, brown rice, almonds, mint, dill, cinnamon, salt, and pepper. Mix well and remove from heat.
- Place 1 tbsp filling near the base of each grape leaf, fold in sides, and roll tightly.
- Arrange rolls seam-side down in a heavy pot, layering as needed.
- Pour beef broth and lemon juice over rolls. Add water to just cover.
- Bring to a boil, then reduce heat, cover, and simmer 50 minutes until rice is tender.
- Let cool slightly and serve warm or at room temperature.
