ingredients
- 8 brown rice paper wrappers
- 8 oz cooked shrimp, halved lengthwise
- 1 cup cooked buckwheat noodlesblood sugar & pre-diabetesheart health
- 2 cups fresh lettuce, torn
- 1 cup fresh mint leaves
- 1 cup fresh cilantro leaves
- 1 cup fresh basil leaves
- 1 cucumber, cut into thin strips
- 2 medium carrots, julienned
- Peanut dipping sauceheart health
method
- Fill a shallow bowl with warm water. Dip one rice paper into water for 5–10 seconds until pliable.
- Lay wrapper on a damp work surface. Arrange 2 shrimp halves in a line near the bottom, pink side down.
- Layer buckwheat noodles, lettuce, mint, cilantro, basil, cucumber, and carrot on top of shrimp.
- Fold the bottom of the wrapper over the filling, fold in the sides, and roll tightly to seal.
- Repeat with remaining wrappers and filling.
- Prepare Peanut Dipping Sauce as directed.
- Serve rolls immediately with dipping sauce.
