Hot Flash Cook Shrimp Summer Rolls

ingredients

  • 8 rice paper wrappers
  • 1 lb large shrimp, peeled and deveined
    muscle losstired & low energy
  • 4 oz rice vermicelli noodles
  • 4 oz kelp noodles or spinach-based noodles
    blood sugar & pre-diabetesbone density (I'm shrinking!)
  • 1 head butter lettuce, leaves separated
  • 1 cup fresh mint leaves
  • 1 cup fresh cilantro leaves
  • 1 large carrot, julienned
  • 1 cucumber, julienned
  • Water for softening rice paper
  • Peanut Dipping Sauce

method

  1. Cook kelp noodles or spinach noodles according to package directions. If using rice vermicelli, use 4 oz instead of 8 oz. Drain and cool.
  2. Bring a pot of salted water to a boil. Add shrimp and cook 2–3 minutes until pink. Drain and halve lengthwise.
  3. Prepare the Peanut Dipping Sauce (see below).
  4. Fill a shallow bowl with room-temperature water. Soften one rice paper wrapper at a time by submerging 3–5 seconds, then lay on a damp towel.
  5. On each wrapper, layer: lettuce leaf, a pinch of noodles, mint, cilantro, carrot, cucumber, and 2 shrimp halves.
  6. Fold in the sides and roll tightly. Place seam-side down on a plate.
  7. Serve with the Peanut Dipping Sauce.
