the swaps that make it work
2 tbsp vegetable oil → 1 tbsp olive oil
→ Olive oil has more heart-protective polyphenols and a lower smoke point suits the actual cooking method
Ground beef 80/20 → 90/10 lean
→ Reduces saturated fat without losing the beef flavor or tenderness of the dish
Oyster sauce (regular) → low-sodium oyster sauce
→ Cuts sodium by ~25% while keeping the authentic umami flavor
1 tsp sugar → ½ tsp honey or omit entirely
→ Holy basil and fish sauce provide natural savory depth; less added sugar supports steadier blood sugar
Beef stock (regular) → low-sodium beef stock
→ Further reduces sodium load without sacrificing depth
