- 2 cups vegetable broth
- 10 oz extra-firm tofu, cubedmuscle loss

- 1 large red bell pepper, slicedheart healththinning hair & dry skin
- 2 tbsp lime juice
- 1 tbsp coconut aminos
- 1 tsp honey
- 2 cups fresh spinach or bok choybone density (I'm shrinking!)muscle losstired & low energy
- Fresh Thai basil or cilantro for garnish

method
- Heat coconut oil in a large pot over medium heat.
- Add garlic and ginger, sauté for 1 minute until fragrant.
- Stir in red curry paste and cook for 1 minute.
- Pour in coconut milk and warm broth, stir well.
- Add tofu, mushrooms, and bell pepper. Bring to a gentle simmer.
- Cook for 8–10 minutes until vegetables are tender.
- Stir in greens and cook 2 minutes until just wilted.
- Add lime juice, coconut aminos, and honey. Taste and adjust seasoning.
- Serve hot, garnished with basil or cilantro and lime wedges.
