Hot Flash Cook Warm French Lentil Salad
serves 4
ingredients
- 1 cup French green lentils
- 1 small red onion, finely diced
- 2 medium carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 3 tablespoons red wine vinegar
- 4 tablespoons extra-virgin olive oil
- 1 teaspoon Dijon mustard
- 1 bay leaf
- 1 thyme sprig
- 4 cups homemade vegetable or chicken bone brothbone density (I'm shrinking!)achy joints
- Salt and pepper to taste
- 2 tablespoons fresh parsley, chopped
- 2 ounces crumbled goat cheese (optional)
- 1 tablespoon fresh lemon juiceheart health
method
- Rinse lentils and place in a pot with broth, bay leaf, and thyme.
- Bring to a boil, then simmer for 25–30 minutes until lentils are tender but not mushy.
- Drain and discard bay leaf and thyme.
- While lentils cook, heat 1 tablespoon olive oil in a large pan. Sauté onion, carrot, celery, and garlic until softened, about 5 minutes.
- In a small bowl, whisk together red wine vinegar, lemon juice, remaining 3 tablespoons olive oil, and Dijon mustard.
- Toss warm lentils with sautéed vegetables and dressing.
- Season with salt and pepper. Stir in fresh parsley.
- Serve warm, topped with goat cheese if desired.
